When I was a kid, my parents didn't have all the special locks and knobs to prevent me from hurting myself. We did just fine! Is it absolutely necessary to lock everything in your house down?

Baby proofing change
As mentioned in previous comments, the needs for baby proofing change as the child grows.
I would baby proof just the items that my baby hangs around, and make a safe environment for my little one. I would lock the really dangerous things like chemicals, knifes, medication and other stuff like this, and I would assure that the space my baby spends the time in, is very safe.
Baby nursery bedding store and baby nursery decoration store are some great online resources for baby products.
Baby proofing
We are also the kind of parents everyone says, "I wish I could be that relaxed.." but to be honest it is just that there isn't always the time to babyproof everything, nor deal with it when it is all babyproofed. We are having our 3rd kiddo in August (others are 3 and 1) and we have found that there is no need for the first 6 months (they don't move without you) and then the need changes as they get bigger and more creative. Just go with the flow. Other than the major things (lock up knives, chemicals, and shut the bathroom doors) you will figure out that a safety feature (or a sanity feature-if you don't want pens marks everywhere or the bag of straws dumped on the floor) is needed when you need it.
Sanity proofing
True, the needs grow and change with the child. Our breakables have just moved to a higher shelf and books have come down (she can pull the dictionnary out and carry it around as much as she want as long as she does not start chewing on it again).
Parents-proof cabinet and drawers
I hate those things! you need both hands to work them and they damaged your cabinet doors with their super strong screws. We decided to go the easy way and put a gate to bock the entrance of the kitchen. The bathroom and laundry room doors are also always closed. We did get the plug covers though, but only where my daughter hangs around. As for the rest of the furniture "padding", let's just say that she doesn't fall twice in the same spot.
